Itching to get Scratching: JVS Pastry Arts Graduate is Pastry Chef at Kiawah Island Resort

Brittany Boris scratches a lot, but it has nothing to do with allergies.

It just goes with Boris' territory as pastry chef at Kiawah Island Golf Resort in South Carolina and her "make everything from scratch" philosophy of baking.

Boris, a 2007 graduate of the Bakery & Pastry Arts program at the Lorain County JVS, perfected her talents at the Pennsylvania Culinary Institute in Pittsburgh.

"My mom wanted me to become a nurse," Boris laughed. "She wanted me to have a degree, not a certificate. When she saw all the different degree career options that I would be prepared for, she felt better about my career choice."

Boris said the JVS Bakery & Pastry Arts program prepared her well for her classes at PCI and her degree in Bakery and Patisserie.

"The textbook used at PCI is the same book used at the JVS, so I was ahead of the curve," said Boris, who completed the two-year program in 15 months thanks to the college credits she earned at the JVS.

"I love making desserts, especially the ones I create myself - all from scratch," said Boris. "Baking from scratch just gives my desserts more flavor. I love the full effect of sugar."

As pastry chef, Boris is responsible for planning dessert menus, which change each season.

For Fall, Boris' pumpkin cheesecake with gingersnap crust and cinnamon whip cream, topped with a drizzle of bourbon caramel sauce, is taking center stage.

But her apple pie is taking bows, too.
